Our olive varieties include Olivastra Seggianese, Moraiolo, Frantoio, and Leccino.
We perform regular pruning each year to ensure consistent quality. While early harvesting reduces the yield of oil per quintal of olives, it ensures high quality in the final product and imparts an intense fruity flavour to our oil.
The olives are milled promptly at the end of each day to prevent fruit oxidation.
To meticulously oversee each stage of production and ensure the integrity of the product, we inaugurated our own olive mill in 2021, where we have been producing top-quality Extra Virgin Olive Oil annually since then.
