Extra Virgin Olive Oil
In addition to the DOC wines, we produce an excellent Extra Virgin Olive Oil. The most cultivated olive varieties are the Olivastra Seggianese, the Moraiolo, the Frantoio and the Leccino.
We prune every year, so that the quality yield remains constant. The early harvesting, although impeding a high yield of oil per tons of olives, gives our oil an intense fruity flavor and guarantees a higher quality of the final product.
The olives are milled regularly at the end of the day, in order to prevent the oxidation of the fruit.
In order to best follow every step of the production and ensure the integrity of the product, our company plans to build an olive mill supplied by the most modern technologies.
